The Phony Mezcal Negroni takes the bitter botanical foundation of the original Phony Negroni and introduces smoke, citrus peel, gentian root, and enough vegetal earthiness to make the absence of actual mezcal surprisingly easy to forget. Thirty botanicals are involved, which seems like an unreasonable number until you consider how difficult it is to make a complicated cocktail without the ingredient normally responsible for making cocktails complicated. It’s bitter, smoky, lightly carbonated, and ready to drink. Pour it over ice or drink it straight from the bottle. Either way, nobody has to pretend sparkling water is a cocktail.
