Spring & Mulberry started with a fairly radical question for a chocolate company:  what if sugar wasn't doing all the interesting work? Instead of refined sugar or artificial sweeteners, the brand uses organic dates to bring out the natural richness of cacao, then layers in fruits, nuts, florals, spices, and other ingredients that make chocolate considerably more interesting than simply “sweet.” Their cacao is direct-trade, single-origin, and regeneratively farmed, with an approach that treats chocolate less like candy and more like something worth paying attention to. Turns out removing refined sugar leaves considerably more room for everything else.
