Lapo's Aperitivo belongs firmly in the second category. Italian orange gives it a bright citrus opening, gentian brings the bitterness, and hibiscus, juniper, rhubarb, and dandelion root add enough herbal complexity to keep every sip slightly interesting. Lapo's was inspired by a real Italian bartender named Lapo, remembered for his tuxedo, his Negronis, and apparently understanding something important about how an evening should unfold. The brand translates that spirit into 0.0% aperitifs and cocktails built around bitter citrus, herbs, roots, and botanicals.
